Kurkuri Bhindi

This is one recipe which i made recently and instantly fell in love with it..Normally we make poriyal, avial, thoran, kichadiand even sambar out of the ladysfinger. I have even tried a completely different Rajasthan Bhindi too..But this one is completely different, plus it is so simple to make. You just need a handful of ingredients but the end product is crunchy and delicious.. Make sure you check all my ladysfinger recipe too.

This is a fried ladysfinger or okra dish..I have another version of a ladysfinger fry, will share it soon. But i love the simplicity of this recipe. I added some amchoor powder in this, which gave a nice tangy effect to it. If you love amchoor powder, You can even sprinkle some after it is fried. Ingredients for Kurkuri Bhindi Recipe (Crispy bhindi recipe)

  • Ladyfinger / Okra - 10
  • Chilli powder - 1 tsp
  • Garam Masala Powder - 1 tsp
  • Amchoor Powder / Dry Mango Powder - 1.5 tsp
  • Turmeric Powder / Manjal Podi - ½ tsp
  • Gram Flour / Kadalai Mavu / Besan - 3 tblspn
  • Water - few spoons
  • Salt to taste
  • Oil for Deep frying

How to make Kurkuri Bhindi Recipe (Crispy bhindi recipe)

  1. Wash and dry ladyfinger, cut the top off. Slit ladysfinger and cut them in half. Take them in a bowl.
  2. Add all ingredients except oil and water. Mix well.
  3. Sprinkle some water and mix well so the masala coats the ladysfinger.
  4. Heat oil for deep frying.
  5. Drop the ladyfinger in and fry till golden. Drain and serve.

Ingredients

  • 10 Ladysfinger

  • 1.5 tsp Amchoor Powder / Dry Mango Powder

    Hi Aarthi, i read somewhere that adding baking powder increases the crisp of the fried okra (or any other) and maintains the crisp for a longer period. Have you tried it before and does it make a difference?

    Someone also told me to mix wheat flour and rice flour in equal portions to get better crisp. What is your opinion? I tried it yesterday but the wheat flour wasn't as tasty as gram flour. Pls advise.

    @Anonymousa little pinch of baking powder will make it crisp and wheat flour will not taste as good as gram flour,

    Hi Arthi akka.. the recipe looks delicious. Going to try it today. Everyone in my family loves such healthy fried food as side dish for a regular meal. But I always wonder what to do with so much leftover used oil.? Let me know how do you handle it or should we dispose it since used oil is unhealthy.
