Ube pandesal originated in the Philippines, and its recipe foundation came from the basic Pandesal recipe. The only difference is that the Bread has cheese filling, and the Pandesal dough is flavored with Ube Extract and Ube Halaya.

This is not your typical Pandesal per see. Ube Pandesal is purple, and it has Ube Halaya; Ube flavoring is added to the bread dough. Pandesal Ube has been trending for a while now, and I think due to its color and not the “usual” type of Pandesal. People tend to patronize new sparkling objects. In this recipe, I used all-purpose flour, and some bakers used bread flour and other types of flour and still had a good result.

I am so excited to make this because not only does the color look so pretty, but it is so worth it to make this. The end product of this recipe is a delicious bread that stays soft and moist for days. Saying that I love this easy Pandesal recipe is an understatement. The instructions are detailed and the video helps you on the recipe bumps.

You can fill it with a cheese of your choice. You can use cream cheese, mozzarella cheese- any cheese really, and I prefer cheddar cheese.

What is Ube Pandesal Made off?

Ingredients for Ube Pandesal are common. Some of its ingredients could be available in your pantry. I got my Ube Flavoring from the Asian store and it’s is found in the spice section. Ube halaya, Ube jam, or dehydrated ube powder however needs to be bought online.

  • Greased bowl – Use a large bowl
  • Parchment paper-lined baking sheet (optional)
  • Electric stand mixer with hook attachment

RECIPE INGREDIENTS

  • Active dry yeast- make sure that you use the correct one instead of instant dry yeast. When I was testing this Ube Pandesal recipe using fast-rise yeast, the result was complex and had a lot of holes in it.
  • Sugar – I used granulated sugar.
  • Warm water & warm fresh milk
  • All-purpose flour some tried making this using bread flour, whole wheat flour.
  • Butter- you need to use melted butter in this recipe can use unsalted butter and salted butter.
  • Eggs- at room temperature.
  • Salt & sugar
  • Ube flavoring or Ube Extract I used McCormick Ube flavor. liquid ube extract
  • Ube Halaya/Ube Jam or dehydrated, powdered sugar. You can find all of these ingredients in the Asian Market, and you can also make it from scratch from frozen grated Ube.
  • Bread crumbs
  • Cubed cheese quick melt cheese or cream cheese.

INGREDIENT NOTES

  • There are different brands for Ube Flavoring. In this recipe, I used Mccormick Ube Extract. Ube Liquid flavor
  • Rodelle Organics Ube Extract Ube purple yam organic
  • You can substitute all-purpose flour with bread flour
  • Rehydrated Ube powder-you can rehydrate Ube powder to make Ube Halaya.
  • Use melted butter, not softened butter
  • Make sure that you use active dry yeast, not fast rise yeast or instant yeast. Would you mind checking my dinner roll recipe for the difference between the two?

TIPS TO MAKE UBE PANDESAL?

As I mentioned before, I had made Pandesal several times and all the time got great results. And this one turns excellent as well. And as you can see in the pictures, it was a success. So you have to follow the process to a T 🙂

  • First, make sure that you are using active dry yeast.
  • Mix the yeast with warm water. What I do is I boil 2/3 cup of water, remove 1/3 of it, and then replace it with 1/3 of tap water and then mix the yeast, water, and sugar. Let it bubble.
  • Make sure that you have nonexpired yeast. You can test your yeast by mixing it with water, and if it does not bubble within 5 minutes, it is expired.
  • Let the dough rise in a warm place.
  • Use a thicker cheese, or it will melt away during baking. I have cheese singles at home, so I stacked 4 of them and divided them into eight rectangles.
  • Measure the flour correctly; adding too much flour can harden the dough
  • Do not add more flour

Ube Cheese Pandesal Recipe

Soft, fluffy, and surprisingly easy to make Ube Pandesal with Cheese. With this easy recipe and video, I will show you how to make it, with these easy-to-understand recipe instructions.

  • Prepare the equipment: Brush a deep bowl with canola oil or vegetable oil. Set aside
  • Prepare the yeast mixture: Boil 2/3 cup water and remove 1/3 of it, and replace it with 1/3 cup of cold water. Add warm water in a small container and add in Active dry yeast and sugar. Mix and let sit for 5 minutes until bubbles form. Add in one cup of flour and let it sit for forty-five minutes.
  • Ube Pandesal dough: Place the milk to warm in the microwave oven for 45 seconds. Add place the warm milk, butter, sugar, salt,Ube extract, Ube halaya, and egg into a mixing bowl. Add the yeast mixture to the remaining all-purpose flour in the bowl. Mix using the hook and knead the dough until ingredients are incorporated.
  • Transfer dough to a flat surface and form into a ball. Place dough in a lightly oiled bowl and cover with plastic wrap. let sit at a warm temperature for 1 hour.
  • Place the on the flat surface. Dough consistency should be a little sticky. Divide the dough using a dough slicer into two and form a log. Cut the dough and weigh 60 grams each, and using your palm flatten and fill with the cubed cheddar cheese. Make sure that it is sealed. ( it is ok not to weigh the dough and form almost equal shape pandesal. Put the dough into the baking sheet
  • Cover the dough with a damp cloth or plastic wrap and let sit for another 30 minutes.
  • Uncover dough and roll into bread crumbs.
  • Preheat oven at 350 F. Bake Ube Pandesal in a preheated oven 350 F oven at 25 – 30 minutes.

HOW DO YOU STORE

  • You can store this bread in an air-tight container and let it sit at room temperature.

CAN YOU FREEZE PANDESAL?

  • Yes, you can freeze and refrigerate Pan de sal. Just thaw it before eating, and you can microwave it for 45 seconds.

Ingredients

Prepare the Yeast MIxture

  • 1 packet of active dry yeast 1 packet is 2 1/4 teaspoons of active dry yeast
  • 1 tbsp sugar
  • 2/3 cup lukewarm water
  • 1 cup All Purpose Flour

How to Make the Dough

  • 3 cups All Purpose flour
  • 2/3 cup milk
  • 1/4 cup melted butter
  • 1 egg
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 1 cup bread crumbs please see notes
  • 1 tablespoon Ube Flavor
  • cheese of your choice

Instructions

  • Brush a large bowl with oil. Set aside.

Prepare the yeast Mixture

  • Warm the water in the microwave for 35 seconds. Add the active dry yeast and sugar. Mix and let sit for 5 minutes until bubbles form. Add mixture into the 1 cup flour and let it sit for forty-five minutes.

Make the Ube Pandesal Dough

  • Place the hook attachment in your electric mixer.

    When the yeast mixture is ready, place flour and salt in the small bowl and mix using a wire whisk. Warm the milk for 45 seconds and then place the warm milk, melted butter, egg, ube flavor, and sugar into the stand mixer bowl. Mix for one minute and add the yeast mixture and flour mixture. Mix using the hook attachment until ingredients are incorporated. Mix for seven minutes.

  • Sprinkle flour on the working surface and transfer dough and form into a ball. Place dough in a greased bowl and let sit, covered with cloth, at a warm temperature for 1 hour.

  • When ready, divide the dough into a round dough and divide it into sixteen pieces using the dough cutter. You can also cut dough and weigh 60 grams each and using your palm flatten and fill the cheese. Make sure that it is sealed. ( it is ok not to weigh the dough, just try to form equal shape bread.

  • Cover the dough with a damp cloth and let sit for another 30 minutes. Roll the dough in the breadcrumbs.

  • Preheat the oven to 350 F and place the bread on a baking sheet and bake for twenty minutes.
