HEALTHY RED POTATO SALAD
I love a good potato salad. But most potato salads are full of fat and drowning in mayonnaise. I have several relatives who can’t eat potato salad because the mayonnaise upsets their stomachs.
So, I was excited to find this recipe on Side Delights’ HUGE recipe database for a healthy red potato salad. It’s the perfect blend of classic and healthy to please every single person at our extended family barbecues.
The mayonnaise is swapped for nonfat yogurt. I used my favorite nonfat Greek yogurt for extra creaminess. But the potato salad dressing is still flavorful thanks to yellow mustard, dill pickle juice, red onion, celery, and parsley. And, of course, some salt and pepper.
I also added some boiled eggs to the recipe because in our family it’s not a classic potato salad unless it has boiled eggs. Feel free to skip them if you want a red potato salad with no egg.
In addition to the lightened-up dressing, there is added nutrition thanks to the peels of the red potatoes.
Potato peels are packed with iron. While a whole potato can give you 1/4 of your daily iron, 88 percent of that iron is from the potato skin. The potato skins also contain fiber and protein, along with a variety of vitamins and nutrients.
MAKING RED POTATO SALAD EASY
I was so excited to learn about Side Delights’ Steamables. They have triple washed potatoes sealed in a bag, so you can simply steam them in the microwave. It’s a great trick for quickly cooking potatoes for an easy side.
But the Steamables are also perfect for quickly cooking potatoes to make potato salad, mashed potatoes, or any other dish that needs the potatoes pre-cooked.
I love that I can gather my ingredients and get everything chopped while the potatoes are steaming in the microwave.
The potatoes come out perfectly fork tender. But because the potatoes were steamed, they are not water logged as can happen with the traditional boiling method.
I timed myself making the recipe. I had pre-boiled eggs from the grocery store, so my only cooking was steaming the potatoes. From the moment I pressed start on the microwave, to when I had everything mixed together and ready to refrigerate, prep time was just 20 minutes!
That means you can quickly throw this red potato salad together the night before. Or whip it up it an hour before your potluck, and refrigerate it for a short time before you leave.
You can definitely serve the potato salad right after you mix it together, but the flavors are much more developed after at least an hour in the fridge.
HOW LONG TO BOIL RED POTATOES FOR POTATO SALAD?
If you don’t have a microwave, or prefer the old fashioned method of boiling, you can do that too. Side Delights has regular 1.5 pound bags of Petite Red Potatoes that are perfect for boiling.
So how long do you cook red potatoes for potato salad? Get a pot of salted water boiling and add the potatoes. Cook for about 10-15 minutes, until fork tender but still slightly firm.
The petite red potatoes will need just 10 minutes. Larger red potatoes will need 15 minutes.
HOW TO MAKE RED POTATO SALAD
Start by steaming 1.5 pounds of small red potatoes Steamables in the microwave for 8 minutes.
Mix nonfat Greek yogurt with yellow mustard, salt, and pepper.
Stir in chopped dill pickles and a tablespoon of the pickle juice.
Mix in chopped celery, red onion, and parsley.
Chop the potatoes into bite-sized pieces and mix in chopped boiled eggs.
Pour on the dressing and mix well. The red potato salad is best after refrigerating at least 40 minutes.

Ingredients
Red Potato Salad
- 1.5 pounds Red Potatoes Steamables from Side Delights
- 4 boiled eggs, chopped
- 1/2 teaspoon salt
Potato Salad Dressing
- 1 cup nonfat Greek yogurt
- 2 teaspoons yellow mustard
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 cup minced dill pickles
- 1 tablespoon dill pickle juice
- 1/3 cup minced red onion
- 1/3 cup thin sliced celery
- 1/4 cup chopped fresh parsley
Instructions
- Steam the potatoes in the microwaveable bag for 8 minutes (follow package instructions). While they steam, make your dressing.
- Mix Greek yogurt with mustard, salt, and pepper.
- Stir in chopped pickles and pickle juice.
- Mix in the chopped onion, celery, and parsley.
- Cut potatoes into bite-sized pieces.
- Add chopped boiled eggs and salt, then toss to mix.
- Pour dressing over salad and mix well. Refrigerate at least 40 minutes to let flavors develop.
