French Onion Soup Beef Sliders Recipe

One of my favorite winter comfort foods is soup. I learned how to make my first french onion soup recipe years ago using a recipe I found from a magazine (which I have since misplaced, so sad!). It took me a few times and putting my memory to the test to recreate it. The soup was so delicious it inspired me to make these beef sliders.

We had a few friends over to watch football and these burgers blew them away. They liked that they were a step up from the traditional "game day" food of buffalo chicken or potato skins. After explaining how easy they were to make it was an even bigger shock!

Do You Actually Make French Onion Soup for These Sliders?

In a nutshell, yes. Your au jus is truly just the base of any good soup, but the onions themselves are caramelized and top the beef rather than remaining in the soup.

What's the Best Bread to Serve These On?

A classic French onion soup recipe will be served with a crouton on top or at least a slice of crusty bread on the side. For these beef sliders, it was a must to duplicate that texture.

I chose to cute a loaf of French bread into pieces and toast them up nicely before building my sliders. You can easily use any bread you prefer for this including classic slider buns.

Note* I made my own beef stock which is why you see carrots and onions in the liquid. You can skip this step and just use a store bought broth.

  • Add broth and seasonings to a sauce pan. Heat to boil, reduce to simmer. Let simmer while preparing burgers and caramelizing onions.
  • Slice onions, start slowly cooking them down in a skillet with butter. Stir often. Heat should be on medium low. Onions should be "sweating" (slowly releasing their moisture) not sauteing (sizzling and gaining a quick brown color). Caramelizing occurs when the moisture cooks out and sugars are slowly thickening.
  • Combine all burger ingredients in a bowl, mix well. Hand shape patties into a size that best fits your bread.
  • Bake or grill burger patties to desired temperature (I usually cook to medium)
  • Slice bread, we used a baguette. It holds up the Au Jus dip and has a soft center with crunchy edges!

FAQs

How do you deepen the flavor of French onion soup? ›

A few sprigs of thyme and a bay leaf elevate the soup even more, but I take it a step further, adding a splash of fish sauce for complexity and depth—don't worry, it won't taste fishy—and a hit of cider vinegar to balance some of that oniony sweetness.

Why does French onion soup taste so good? ›

French onion soup is the ultimate comfort food. Onions get slowly cooked until sweet and caramelized, then simmered in rich broth until they're practically falling apart. To finish it off, toasted bread is added to give it that lovable crisp-gone-soggy texture and a generous amount of Gruyère cheese is melted on top.

How do you thicken French onion soup? ›

If you want to thicken your French onion soup, you can add a bit of flour. Combine a couple of tablespoons of flour with a teaspoon of salt and whisk in about a quarter cup of water. Bring the mixture to a boil, then reduce the heat and simmer for about 10 minutes, until thickened.

How do you take the sweetness out of French onion soup? ›

If the soup is too sweet, add some vinegar. If you would like a little more depth, add a splash of red wine. I like the onion-to-liquid ratio with 6 cups of water. But if you'd prefer a slightly more delicate soup, add an additional 1 cup/240 milliliters water or to taste.

Why do you put baking soda in French onion soup? ›

The caramelized onions for this soup cook more quickly due to a pinch of baking soda but still have that deep, slow-cooked flavor. Topping the soup with hot, cheesy toasts prepared while the soup simmers, eliminates the need to bake the soup in specialty French onion soup bowls.

Why is my French onion soup so bland? ›

To improve the blandness of your French onion soup: add more seasoning, caramelize onions longer than usual, use high-quality beef broth, simmer for extended time and include melted cheese with crouton as toppings for added richness.

Do people in France eat French onion soup? ›

It has even become a trendy dish that tourists are eager to try to experience French gastronomy. However, onion soup is in fact not part of French people's daily meals. It was originally meant to be eaten after a family reunion in the middle of the night to cure hangovers…

What is the difference between onion soup and French onion soup? ›

What is the Difference Between Onion Soup and French Onion Soup? French onion soup is always made with beef stock. Other onion soups can be made with chicken, vegetable, or beef stock. Additionally, French onion soup typically contains wine or sherry, which isn't typical or necessary in other onion soups.

What is the etiquette for eating French onion soup? ›

With such a soup, a knife is your friend, not your enemy. Using both the soup spoon and the knife, push the baked cheese against the rim of the cup or bowl and cut it gently with the knife. Once you've broken the cheese barrier, you can use the knife again to nudge bits of cheese onto the spoon.

Why add flour to French onion soup? ›

Flour: a little all-purpose flour will help to thicken the soup. You can feel free to use gluten-free flour. Dry white wine: this helps to deglaze the pan and add a boost of flavor.

What can I use instead of wine in French onion soup? ›

If you prefer not to use Wine, you can substitute 3 Tablespoons white wine vinegar + chicken or beef broth to make 3/4 cup.

How thin should onions be for French onion soup? ›

Slice your onions thinly.

French onion soup is best when thin slices of onion almost melt into the hot broth, so you don't want big onion chunks in this recipe. Use the sharpest knife you have to slice the onions into thin strips.

How can I increase the flavor of French onion soup? ›

Add salt and pepper to taste, but don't be shy with the amounts. French onion soup requires a good amount of seasoning to bring out its true flavors. Enhance the taste with herbs and spices. Traditional herbs like thyme and bay leaves work exceptionally well in French onion soup.

How do you get the bitterness out of onion soup? ›

Soaking the onions in cold water for 10 minutes before cooking can help to reduce the unpleasant taste and smell. Additionally, adding a pinch of sugar to the cooking onions can also help to reduce their pungent flavor.

How do you make French onion soup less bland? ›

Most likely it could be from not caramelizing the onions long enough, as this is crucial for flavor development. Also, be sure to use a good quality broth and season the soup properly with salt and pepper. You can try adding a splash of balsamic vinegar or Worcestershire sauce for a boost of flavor.

How do you add depth of flavor to soup? ›

Got a soup that tastes a little bland and unexciting? Add a splash of vinegar (any kind!), or a squeeze of citrus. Chances are, you could use a little more salt.

How do you doctor up canned French onion soup? ›

To elevate the canned version, quickly saute fresh onions, instead. Cook the thinly sliced onions in butter until they start to soften and take on a golden brown color, which indicates their sweet taste. The process only takes a few minutes and infuses French onion soup with a rich, decadent taste.

How do you get the most Flavour out of onions? ›

Soak in Vinegar: It only takes about 15 minutes. Soaking raw onions in acid rinses away the harsh flavors and adds pleasant tartness. Soak in Water: Even water washes away those pesky sulfuric flavors. A quick 15-minute soak does the trick.
