This Crock Pot Cheesy Chicken Taco Soup recipe is super simple and incredibly yummy. The flavors are like a party in your mouth! You are going to love it!
You can throw it together very quickly, especially if you cook your chicken ahead of time, and it cooks up in only two hours! It is a great treat with just a little time!

How to Make Cheesy Chicken Taco Soup in a Slow Cooker

When I say this Crock Pot Cheesy Chicken Taco Soup is flavorful and delicious, I mean it! My seven year old is an open hater of beans, tomatoes and chiles. However, he loves chicken, cheese and anything taco. I gave him a bowl (per his request since he did not know what was in it) for lunch. I asked him what he thought after he had finished his bowl. His response? “It was so good Mom! I think that may have been one of the best recipes you have ever made! I loved it!” High praise from a kid who is having to try out new recipes ever single week of his little life! lol
This is also an incredibly easy recipe. If you have some leftover chicken, you can totally use it either cut up into bite size pieces or even shredded. However, if you do not have leftover chicken, you can make it like I did with cooked chicken. How you cook your chicken is entirely up to you. You can use an indoor or outdoor grill, fry it up or boil it up. Whatever you please!
There are two cups of Mexican blend cheese on the top of the soup. If that is not enough for you, feel free to add some more on top when serving. For those who love sour cream, feel free to add a dollop of sour cream on top!

Ingredients
- 4 cups cooked chicken
- 15.5 oz can black beans undrained
- 14.5 oz Can Diced Tomatoes- Basil Oregano and Garlic Flavored. undrained
- 4 oz can chopped green chilies undrained
- 10.5 oz Can Cheddar Cheese Soup
- 1 oz taco seasoning
- 2 cups Mexican Blend Shredded Cheese
Instructions
Put all of your ingredients except your shredded cheese into a 4-quart crock pot and mix until well combined
Sprinkle your shredded cheese on top
Cover and cook on high for 1.5-2 hours or low for 3-4 hours
