Chocolate Hazelnut Surprise Cookies + A JIF Giveaway! - CONTEST CLOSED - Easy Recipes for Family Time - Seeded At The Table (1)When it comes to peanut butter, there is no question that I'm a choosy mom. I choose JIF--Every.Time. Now, JIF has broken out of its shell and gone hazelnuts! Needless to say, when they contacted me a few months ago about trying their new hazelnut spreads, not only was I interested, but I was immediately excited. I knew I would love it, and love it I do!!

As any weary mother would, I first opened the jars and scooped some out (using a cookie, of course) to eat straight up. I had to stop myself so that I would have enough left to use in a recipe or two.

The box from JIF also included homemade vanilla bean marshmallows from Three Tarts (NYC) and a package of graham crackers. So, when Ben arrived home for his lunch break, we microwaved S'mores, first with the chocolate flavored hazelnut spread, and then of course, we had to have a second one with the mocha cappuccino flavor. To die for.

Since I've been on a cookie baking kick the last few months, largely due to having loads of kids to share with in our neighborhood, I decided I needed to make cookies with the new hazelnut spreads. Right away, my mind went to stuffing this goodness into chocolate chip cookies.

After three trial runs, I came up with a chocolate chip cookie base that is perfect for enveloping a dollop of chocolate hazelnut cheer. Do you remember those store-bought cookies we had as kids with the chocolate centers? They were crispy cookies, and that's exactly what I was going for with these. I didn't want pillowy or soft. I achieved crispy edges, yet chewy towards the center, with a surprise of chocolate hazelnut spread in the middle.

Before we get to the recipe, let's talk about your chance to win a trial of JIF's new hazelnut spreads, with a few other goodies! One of you will win the following package:

Chocolate Hazelnut Surprise Cookies

Prep Time20 minutes mins

Cook Time10 minutes mins

Total Time30 minutes mins

Servings: 2 dozen

Author: Nikki Gladd

Ingredients

  • 1 cup unsalted butter , at room temperature
  • ¾ cup light brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 2 ½ cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ¼ teaspoon cinnamon
  • ½ cup miniature chocolate chips , or 1 cup standard chocolate chips
  • JIF chocolate hazelnut spread

Instructions

  • Preheat oven to 350 degrees F. Line two baking sheets with parchment paper or silicone mat.

  • In a large mixing bowl, cream together the butter and sugars until light and fluffy, about 3 minutes. Add eggs, one at a time and mix until thoroughly combined. Stir in the vanilla.

  • In a separate bowl, whisk together the flour, baking powder, baking soda, salt and cinnamon. Gradually add to the butter/sugar mixture. Stir until just combined. Fold in the chocolate chips.

  • Scoop six 1-tablespoon sized dough balls onto each baking sheet (12 total). Using your thumb, press a dent in the center of each dough ball. Fill each thumbprint with about a teaspoon of chocolate hazelnut spread. Carefully top with another tablespoon of dough, pinching the seams together to seal in the hazelnut spread, not allowing it to ooze out. (Following video helps demonstrate.)

  • Bake in the preheated oven for 10-12 minutes, until the edges just start to crisp.

Notes

You may use your favorite chocolate chip cookie recipe and just fill the centers with the spread. I like this chocolate chip cookie base because of the crisp edges and chewy center. Take note, though, that these cookies spread, so allow no more than 6-8 cookies on each baking sheet.

The following video helps explain how to carefully top the cookies without allowing the hazelnut spread to ooze out.

FAQs

How long will homemade cookies stay fresh? ›

Information. Bakery or homemade cookies can be stored at room temperature two to three weeks or two months in the refrigerator. Cookies retain their quality when stored in the freezer for eight to 12 months. Moist bars, such as cheesecake and lemon bars, can be refrigerated for seven days.

What temperature do you bake cookies at? ›

Bake at 375 degrees F until golden and tender, 12 to 15 minutes. For crispy-cakey cookies: Bake the cookies at 425 degrees F until golden and crunchy on the outside, 8 to 10 minutes. For chewy cookies: Use 1 cup light brown sugar and 1/4 cup corn syrup and omit the granulated sugar.

How do bakeries keep cookies fresh? ›

To extend the shelf life of products, many bakers use specially formulated enzymes for preservation. These naturally occurring protein compounds can keep baked goods soft while preventing crumbling and staling.

Can I leave fresh baked cookies out overnight? ›

Cookies left out overnight are at risk of microbial contamination, especially if they contain perishable ingredients like eggs or dairy. Harmful bacteria, such as Salmonella, can multiply rapidly in these conditions, potentially causing foodborne illness if consumed.

Is it better to bake cookies at 350 or 375? ›

Is it better to bake cookies at 350 or 400? ›

Placing chilled dough in a slightly hotter oven (usually 400 degrees versus 350 — 375 degrees used for cookies like chocolate chip) helps the cookies retain their shape. Cool It. Let the cookies rest on the cookie sheets for a few minutes before removing to a wire rack for cooling.

Why do you have to bake cookies at 375 instead of 350? ›

For those ooey, gooey chocolate chip cookies, 375 degrees Fahrenheit is your sweet spot. It's the perfect temperature to ensure super crispy exterior edges, while leaving the center slightly underdone and, thus, doughy and fudgey. If you're feeling particularly bold, give 400 degrees Fahrenheit a go.

How do you keep homemade cookies fresh longer? ›

How do you keep homemade cookies fresh for a week? ›

How long will homemade cookies stay fresh and how should they be stored? Put them in a plastic bag in the fridge and they should last a few weeks. Or in the freezer they should last months. Out in the air, at room temperature, they don't go stale, they get hard (not sure why this is).

How do you store fresh homemade cookies? ›

Baked cookies will stay fresh for three days in an airtight container at room temperature or in the refrigerator. If you decide to freeze baked cookies, plan to defrost and serve them within three months. How do you like to store your cookies?

How do you keep cookies fresh and soft after baking? ›

Keep Them Sealed

The key to keeping cookies fresh and soft is to seal them in an airtight container, like a resealable freezer bag. And here's a nifty little trick: add a piece of bread to the bag. You might think that the bread trick works because the cookies absorb moisture from the bread.
