28 Vegan Freezer Meals (Gluten-Free) - Rhian's Recipes (2024)

Looking for Vegan Freezer Meals?

I've put together a collection of 28 Vegan Freezer Meals. They're all quick and easy recipes that rely mostly on pantry ingredients (for more on this topic, check out my 100 Vegan Recipes Using Pantry Staples). They're full of flavour, packed with nutrients, and are gluten-free and refined sugar free too. I've particularly focused on recipes that freeze and reheat well.

What type of food freezes well?

  • In general, saucy foods like curries, stews, soups and pasta sauces tend to freeze best.
  • I find gluten-free pasta is generally not good reheated. For this reason, I find it's usually easier to freeze just the pasta sauce and boil your own pasta when you reheat the sauce.
  • Freezing rice can be a bit hit and miss too. Unless you're really careful, white rice can get quite mushy/watery/overly sticky when frozen and reheated. Freezing brown rice tends to have better results, especially when it's in a soup, so I've only included recipes that use brown rice.
  • Freezing potatoes makes them mushy - any recipes that contain potatoes should be replaced with sweet potatoes or some other vegetable.

Tips on how to store these freezer meals

These freezer meals are best stored in Tupperware containers in the freezer.

Tips on food hygiene/safety for frozen food

  • Transfer into a well-sealed Tupperware and leave to cool.
  • Place in the freezer as soon as it has cooled down - don't leave it sitting around at room temperature for too long.

Tips on defrosting freezer meals

  • Though you can leave the frozen food Tupperware to thaw out at room temperature for a few hours before you intend to reheat it, it's safer to do it in the fridge.
  • The night before you want to eat it, transfer it from the freezer to the fridge to let it thaw out overnight.

Tips on reheating frozen food

  • You can reheat it in the microwave, but it's safer and the texture is better if you do it in a pot on the stove (hob) because you can make sure it has been properly heated through.
  • Stir regularly to make sure the heat has evenly distributed.
  • Always reheat until piping hot.
  • For soups, curries, pasta sauces, stews etc you will sometimes need to add a small splash of water if liquid has been lost during the freezing and defrosting process.

How long do freezer meals keep for?

Up to a few months. Any longer than that and the flavour and texture can begin to deteriorate.

FAQs

Can you freeze plant based meals? ›

In general, all soups, chilies, bean dishes, veggie burgers, burritos, and breads freeze well. Besides freezer meals, freezing individual componenets of a meal is very handy. Individual portions of cooked rice or quinoa, chopped vegetables, cooked legumes, sauces.

Can you freeze meals you make? ›

If you still want to eat delicious homemade meals but don't have much time, freezing could do wonders for you! Although it has its pros and cons, freezing ingredients and even full meals is great for stocking up on produce, preserving leftovers from other recipes, and making meal planning a little easier.

How do you freeze individual meals? ›

Individually-sized meals should be frozen in airtight lidded plastic containers to limit the amount of outside oxygen flowing into the dish. It's also wise to double-wrap your plastic containers in a layer of freezer-proof plastic wrap if you're planning on storing the dish for more than a week.

Is Quorn gluten-free? ›

Ok, so some of the more processed Quorn products contain gluten, but the Quorn pieces and mince are both gluten free. And they've become a bit of a staple in our house!

Can celiacs eat vegan food? ›

Following a vegan diet with CD is very possible once you know how. Instead of wheat pasta and breads, my cupboards are filled with brown rice pasta and buckwheat pasta, quinoa and egg-free gluten-free bread. Instead of cow's milk, I use a diverse range of alternative milks including soya, almond, rice, even hemp!

Why can't you freeze ready meals? ›

- Texture changes - Some foods can become unpleasantly soft or mushy when frozen and thawed. This can ruin the intended texture of the food.

Can I freeze meals in plastic containers? ›

Only freeze food in plastic containers designed for the freezer. Only put plastics in the freezer if they have a freezer-safe label. Single use containers, such as ice cream or milk cartons, should be avoided for freezer use.

Can plant-based milk be frozen? ›

Dairy substitutes like almond milk, oat milk, soy milk, and the likes can be frozen. Just know they tend to get grainier than regular milk when stored in the freezer. If you do end up freezing plant-based milks, use them in smoothies or cook with them.

What is not suitable for freezing? ›

“Not suitable for freezing” means it will be edible, but the quality suffers. You can freeze pancakes, for instance, but they don't reheat well, come out flat and rubbery, but are fit to eat.

Can I freeze potatoes? ›

You absolutely can freeze potatoes, and you should if you have an excess of spuds. But there's one important thing to remember: You should really only freeze cooked or partially cooked potatoes, as raw potatoes contain a lot of water. This water freezes and, when thawed, makes the potatoes mushy and grainy.

Can you freeze scrambled eggs? ›

You can also freeze scrambled eggs after they have been cooked. This is a good way to meal prep for the week and to use in dishes like ham fried rice, or for a quick breakfast. They freeze well and taste really good. Let the cooked scrambled eggs cool completely.

Can you freeze mashed potatoes? ›

Yes, you can. Freezing mashed potatoes is a great way to plan for the holidays or avoid wasting any leftovers.

Can I freeze pasta? ›

To keep pasta fresh for several months, opt for the freezer method. Even if you just want to store fresh pasta for more than a day, you should freeze it rather than refrigerate it. If left in the refrigerator for too long, the humidity may alter its flavor and texture or encourage the growth of bacteria.

What dinners are best to freeze? ›

Choose from dozens of delicious freezer meals including casseroles, baked pasta dishes, gumbo, pot roast, slow-cooker soups and stews, and more. You guests will never guess that you just popped that Turkey-Noodle-Poppy Seed Casserole out of the freezer.

What foods are naturally vegan? ›

A vegan diet is based on plants (such as vegetables, grains, nuts and fruits) and foods made from plants. Vegans do not eat foods that come from animals, including dairy products and eggs.

Is it possible to be gluten-free and vegan? ›

A lot of vegan food is naturally gluten free, particularly all fruit and vegetables unless they have been processed. But not all vegan or vegetarian food is gluten free because the cereals that contain gluten – wheat, barley, rye and their derivatives – could be part of a vegan or vegetarian diet.
